Cheesy Ham Casserole

Ingredients: 1 1/2 c. chopped ham, 1 1/2 c. colored corkscrew noodles (cooked and drained), 1/2 c. chopped sweet red pepper, 1/4 c. milk, 1/2 c. mayonnaise, 2 c. broccoli florets, 1 1/2 c. shredded sharp cheddar cheese, 3/4 c. seasoned croutons
Directions: Mix together ham, colored corkscrew noodles, chopped red pepper, milk, mayonnaise, broccoli florets, and 1 c. shredded sharp cheddar cheese. Spoon into a 1 1/2-qt. casserole dish. Sprinkle with 1/2 c. cheddar cheese and seasoned croutons. Bake at 350 degrees (F) for 30 minutes or until heated through OR microwave on HIGH for 8-10 minutes.

Serves: 4-6

Chicken Spaghetti

Ingredients: 2-3 chicken pieces (cooked and chopped up), ~1 lb bag of spaghetti (cooked and drained) , ½ cup parmesan cheese, 1 jar of spaghetti sauce

Directions: Put everything in a big baking dish and mix well. Bake at 350 degrees F for 15-20 minutes. *Don’t over cook otherwise the spaghetti will dry out.

Serves: 6-8

Oven-Fried Chicken Chimichangas

Ingredients: 3 pieces of chicken (chopped or shredded), 1 (4oz) can chopped green chiles (drained), 1 cup Shredded Monterey Jack cheese, ½ cup sliced green onions, 8 (9-inch) flour tortillas, vegetable oil

Directions: Combine first 4 ingredients; set aside. Wrap tortillas in damp paper towels and microwave @ high for 15 seconds (or until hot). Brush both sides of tortillas with vegetable oil. Place ½ cup chicken mixture just below center of each tortilla, Fold up and secure with toothpick. Place on lightly greased sheet and bake at 425 degrees F for 8-10 minutes.
